Tacoma Food Trucks Want a Level Playing Field

Tacoma’s growing street-food scene has exposed a divide between vendors who navigate the city’s licensing and health requirements—and those who begin selling without them. Tacoma-Pierce County Health Department records show that six roadside vendors in Tacoma were closed during July after operating without permits and lacking basic safeguards such as handwashing facilities, refrigeration and employee restrooms.

Today, it hosts a celebration of Tacoma’s many cultures—and a reminder of what reconciliation can look like when a community chooses gathering over exclusion.
